Come works of Pastry Art directed by Chef and Co-owner Mario Armitano. Our Pastry Department creates an original spectrum of Fine French Pastries to challenge the artist in you. Mario – also a renowned sculptor – possesses a determined purpose to make people think in new ways. This is evident in his sculptures (check his website, www.armitano.ca) and also in the myriad delicious concoctions that come out of the La Baguette & L'Echalote Pastry Department. Mario loves to play with the way we see everyday things. He holds up a mirror to them, to us, and reinterprets the habitual in a manner never before seen.
Beginning each work day at 4 a.m. our chefs busily prepare for the daily store opening of 7:30 a.m. There are dozens of Danish and Croissants to create in addition to incredible French Pastries, Cakes and Tartes. Each piece is crafted with the care and attention you deserve. Why? Because for most of us a French Pastry is a treat, that special part of a special meal that has to be perfect, ideal, the classic finish to a spectacular entree. A classic French Pastry must confront each and every one of our senses, taste, sight, smell, touch – and it must do this with grace and aplomb.
What sets our Pastry Chefs apart? They invent Pastry Art that would also challenge themselves, their loved ones and those who have in turn taught them what they know. It is their personal quest to manufacture newness in a world which all too often falls into routine patterns of "the same old thing".
We must always be learning or we stagnate and die and this can be communicated through culinary creations which are true works of Art. Quite simply, our Pastry Chefs love what they do. It shows. We invite you to join the on-going Parade of their Inventiveness!
