In Life you can take the quick, easy route to get from Point A to B or you can stop and smell the roses, the coffee, or the WILD YEAST! Wild yeast is what sets our truly Artisan breads apart.
Many bakeries opt for the faster, more generic and predictable results obtained by using commercial or artificial yeast. We have always loved the REAL THING! Of course there is a price to pay for only using wild, natural yeasts: a longer rising or proofing time. We gladly pay that price! Our Artisan breads take a full 2 days to rise. Time = Flavour. You can't rush quality – just like you can't rush a romantic encounter. Well for La Baguette the creation of Artisan breads is a romantic encounter!
Anybody can call themselves "Artisan". But do they mean it? In their own minds, yes. But they are mistaken. With legitimately Artisan breads you can taste the difference – savour the various elements on the tip of your tongue, clearly delineated by using wild yeasts. You taste something hauntingly unique while at the same time inexplicably familiar. What you DON'T taste in our Artisan breads is bland standardization or mass-production for the single and shallow goal of increased sales.
It all comes down to priorities. Do you want to create something you're proud of no matter how long it takes and at what cost or do you want to cop out and take the easy route?
